Tacos al pastor are one of Mexico’s most famous street foods, and now you can make it at home! Traditionally, the meat was marinated in a sauce with flavours of chillies and achiote then grilled on a vertical spit. However, you can create the same distinct flavours at home with this kit from Cool Chile Company.
The kit contains all the spices, but you’ll also need:
1 small ripe pineapple, 1kg meat (pork shoulder or chicken thighs), 160ml pineapple juice, 50ml cider vinegar, 2 tsp salt, 2 garlic cloves, 3 tbsp oil and your choice of serving accompaniment such as tortillas, sour cream, salsa or guacamole.
To prepare taco al pastor marinade with this kit, start by toasting the chillies. Then blend and sieve them to create a smooth liquid. Add the pineapple juice to the chillies and mix into a paste with the achiote.
Using the pastor marinade
Coat the meat in the marinade and leave in a covered bowl for a minimum of one hour in the fridge, but ideally overnight.
Cook the meat on the BBQ, the grill or the oven.
Slice thinly and serve on warm tortillas with grilled pineapple, coriander, lime and diced onion. Alternatively, serve with rice, beans and sliced avocado.
