The piquin chilli, or chile seco piquin, is a hot, dried chilli with a nutty, citrus flavour. They can be 13-40 times hotter than a jalapeño so are commonly used to create chilli oil, or in seafood dishes. However, they can be used in a wide range of recipes from chilli con carne to pizza.
Preparation and usage: The piquin chilli is very hot and has a beautiful, bright red colour. It is commonly crushed into flakes for adding to pizza and pasta. Not only does it bring heat, but it also adds flecks of colour to create striking and aesthetically beautiful dishes. They are also useful for making chilli oil.
Dried piquin chillies from Mestizo Market can be ground up or crushed while dry. Alternatively, soak them in hot water until they’re soft – roughly 15 minutes – and blend them into a tomato-based sauce. Remember they’re very hot, so only use a small amount at first. Taste and add more if you want it!
