Red mole sauce is similar to black mole, containing cocoa, but in lower quantities. Red mole is generally hotter than green varieties due to the chili peppers used. Mole sauce traditionally contains a mixture of chili peppers, fruit, nuts, chocolate (depending on the variety of mole) and other spices.
