The guajillo chilli pepper is the dried form of mirasol chilli. It’s a deep red colour with a smooth skin and has a mild to medium level of heat. It works great for creating spicy Mexican sauces such as red sauce for enchiladas or chilaquiles. We recommend lightly toasting the guajillo chilli first to stimulate the oils and bring out the flavour. It can then be blended into your favourite recipes!
