Conchita’s Adobo – Rich and earthy. The sauce starts with dried chili Ancho and Morita chili peppers that she expertly brought to life into a thick past with vinegar and flavourful additions of onions, garlic cumin, oregano and oranges. This robust, flavourful and versatile sauce is used as a marinade for all meats and seafood. It can be thinned out with broth to make a sauce, turned into the base of a stew, or used as a condiment.

The recipe is passed down from Conchita, who was born in the 1920’s in the state of Hidalgo, in Mexico. She grew up in a hacienda with her family who were descendants of a mining magnate and philanthropist that arrived from Spain in the 1700’s. Conchita became the matriarch of her family and left behind a legacy we wish to share with the world.
