The Morita chilli refers to a variety of chipotle chilli – a smoked and dried jalapeño chilli pepper. It’s smoked for less time than the Meco chipotle chilli (about half the time) which means that it’s softer and has a more fruity taste. Morita chile is the type of chipotle most commonly used in the United States.
Morita chilli has about the same heat level as a jalapeño, considered moderate.
Preparation and usage:
Morita chilli is usually rehydrated and added to a sauce, stew or salsa. Soak it in hot water until rehydrated, usually about half an hour, then blend into your favourite sauce.
If lightly toasted before rehydrating, it helps to release some of the oil and makes the flavour more complex.
Storage information: Keep them in a dry, cool place.
