Nobody minds a little beer when it comes to adding it to recipes to create an exquisite flavor, the use of this drink and tequila in salsas is very common all over Mexico. This recipe is suitable for everyone (including vegetarians) & for a lot of dishes as well, since it is fabulous with chips, Mexican rice and refried beans.
- 2 large Ripped tomatoes
- 1 small white onion (sliced)
- 3 Fresh Jalapeno chiles
- 2 large unpeeled garlic cloves
- 1/4 teaspoon Mexican Oregano (toasted)
- 1/4 teaspoon Cumin
- 1/2 Cup Tecate Beer
- Salt to taste
Toast the tomatoes, onion slices, chiles, and garlic in a saucepan until dark brown and well blistered. Remove and peel the garlic. Chop, mix well in a bowl and add the spices and beer. Add salt, blend and allow flavors to blend for 30 minutes before serving.
