Put the tomatillos, jalapeno chile, and 1/4 cup of the tomatillo juice from the can into a blender; add the garlic and blend until smooth. In a large frying pan over medium heat, heat the oil; add the liquid of the blender and simmer for 5 minutes, stirring occasionally. Add broth; continue to cook for 5 min more. Add salt and pepper to taste.

For the Enchiladas

Mix the shredded chicken, onion, and cilantro together. Dip the tortillas, one at the time, into the Salsa de Tomatillo and then place 3 to 4 tablespoons of chicken mixture in the center of the tortilla and roll up. Place in a baking dish.

After all the enchiladas are in the baking dish, pour the remaining sauce over and place under the broiler for a few minutes to warm. Remove from oven and top with the Mexican style Queso fresco.

Dont be afraid to also top them with sour cream, or serve with Refried Bayo Beans or rice as a side dish to compliment this delighful dish. You can also change the filling to shredded beef, cheese or potato (v) it also tastes amazing!
